Yeah, my main thing is being able to pay with it. Sadly basically all banks have only support for either Google or Apple Wallet and I’m not sure if Google Wallet work with MicroG since it didn’t even work with actual GPServices on a custom rom
I imagine it might be possible to fully spoof another phone model for specific apps. Seems like the kind of thing that should be technically possible by copying cryptographic keys from other devices, and then using root system access to spoof “correct” responses from the Android APIs.
I also imagine this will be an important feature for a lot of users, so someone is likely going to do the work to get it working if Linux phones become (otherwise) viable Android phone replacements.
Its not the only thing, but it is very convenient since I have it with me anyway if I go shopping, because I listen to music instead of the screeching noises of ten thousand families and children. And I rarely carry cash

Just use a card or cash, IMO having your phone be the only thing you pay with is a risk if it gets stolen.
